ด้วยความที่เชฟ Naonobu เป็นคนโตเกียว วิธีการทำปลาไหลของร้านจะเป็นแบบคันโต (Kanto) ซึ่ง จะแตกต่างกับฝั่งนาโกย่า หรือแบบคันไซ (Kansai) การแล่ปลาไหลสไตล์คันโตเนี่ยจะแล่จากทางหลัง ซึ่งเป็นวิธีที่ทำให้ได้เนื้อเยอะ หนา นุ่ม โดยจะนำไปย่างหนึ่งรอบ จากนั้นนำไปนึ่ง และนำกลับมาย่าง อีกรอบ จุดเด่นของ Unagi แบบคันโตคือเนื้อจะนุ่ม กินคู่กับซอสรสชาติอ่อนๆ ทำให้ได้รับรสของปลา ตามธรรมชาติ

จานนี้คือ Karasuni Somen with Truffle เป็นเส้นโซเมนที่เสิร์ฟเป็นแบบเย็นให้ความรู้สึกสดชื่น ตัว เส้นเนี่ยจะมีส่วนผสมของไข่แดงและชิโอะคอมบุทำให้มีความครีมมี่หน่อยๆ ทีเด็ดเลยคือไข่ปลา กระบอก (Karasumi) ที่เชฟเล่าให้ฟังว่าเป็นวัตถุดิบที่พรีเมี่ยมมากๆ ด้านบน top ด้วย Truffle ทำให้รสชาติชัดขึ้นมาอีกหน่อย เราว่าตัว truffle แอบไปกลบรสอื่นๆ ไปหน่อย แต่กินรวมๆ แล้วคืออร่อยเลย ค่ะ
